Recipe: Shaved Brussels Sprouts

One of my favorite side dishes is Brussels Sprouts. It's one of those foods that you either love or don't. I first tried them just a couple of years ago when my Mom made them for Thanksgiving. Her recipe was delicious and I was hooked. Since then I will usually roast them and eat them as a snack. Even Ellie loves them. While at Trader Joe's this week I bought the packaged prepared version. At around $3 it's definitely worth buying prepared (especially for this busy mama):


Recipe:
Serves 2-3
1 bag shaved Brussels Sprouts
2 Tbsp olive oil
1 clove garlic
2 Tbsp brown sugar
1/4 cup toasted almonds (or pecans, walnuts)
Sea salt & pepper

Heat the olive oil over medium high in a large skillet. Add chopped garlic and saute about 30 seconds or until brown. Add bag of Brussels Sprouts and saute for about 5-8 minutes until bright green and soft. Add brown sugar, sea salt and pepper. Mix together. Remove from heat and garnish with toasted almonds. I only had slivered almonds in my cabinet so that is what I used. I have also used toasted pecans, which are delicious, too. This is such a quick and easy recipe. Enjoy!
