New Obsession: Zoodles! + Zoodle Avocado Recipe

I hopped on the veggie noodle trend and tried zucchini noodles. Oh my goodness. Amazing. I am addicted. I first bought this tool at Bed, Bath, and Beyond for $10:
I looked online on how to prepare the zucchini, then created my own recipe. I wanted to add an ingredient that would be filling and we had ripe avocados on the counter so I used one. These are hot noodles so the avocado and cheese melted in the dish and was delicious. I ate this for lunch, but it could also be served as a side dish or in place of a salad at dinner. You must try this recipe- you will not be disappointed!

Zucchini Noodles with Avocado:
(Serves 1)

2 zucchinis
2 tablespoons olive oil
salt and pepper, if desired
1/4 avocado
1 tablespoon Asiago cheese, shredded

1. Wash zucchini and trim ends
2. Peel the skin (I use my favorite Cutco peeler)
3. Use the julienne peeler (or other tool) to create thin "noodles" (stop once you reach the seeds)
4. Wrap in paper towels and squeeze to absorb the water
5. Heat pan and add olive oil
6. Add zucchini and saute for three minutes
7. Remove from pan
8. Add avocado and cheese and stir to combine
9. Garnish with a few sprinkles of cheese and salt and pepper
